All candy molds should be thoroughly washed with hot water and buffed dry with a soft cotton towel.Be sure there are no water spots or drops of water left behind or they will tarnish the look of the finished chocolates.
About Merckens Chocolate
All Christmas Chocolates were made using Merckens Candy Coatings, which do not require tempering. They have a smooth texture and creamy chocolate flavor. The chocolate used for "painting" the molds can be melted in very small amounts. Take care to microwave it for a few seconds at a time until melted. For small details on chocolates, use candy writers in various colors to decorate molds. When filling molds, melt about 8 ounces of Mercken's Candy Wafers in a microwavable bowl at 50% power for one minute. Stir the chocolate, then microwave for another 30-60 seconds if needed, until almost completely melted. Continue stirring until fully melted. You can tint white chocolate with Americolor Oil-based Candy Coloring. Be sure to use only oil-based candy colors on chocolate products.
Bells, Christmas Presents, Snowman and Star Pops
For Bells with Holly, paint holly berries with red melted chocolate. Freeze until set. Next, paint holly leaves with green melted chocolate, and bell knocker with orange candy writer. Paint ribbons on Squares with Bows (Presents) Chocolate Mold using red, white and green melted chocolate. Paint details on Small Snowman with Hat Lolly Chocolate Mold with black candy writer, red and green melted chocolate. Place molds in freezer briefly until set.
Fill bells with red melted chocolate. Fill some Christmas presents with Merckens Cocoa Lite Candy Coating and some with red melted chocolate. Fill snowmen and stars with white melted chocolate. Insert lollipop stick in snowmen and stars and roll it around until it is completely enrobed in chocolate. Tap all molds on counter to remove bubbles. Place the filled molds in the freezer for 5-10 minutes or until the backs of the chocolates feel cold. Place mold on work surface with chocolate facing down and carefully release chocolate from mold. Dust stars with Brilliant Sparkle Sterling Pearl Dust and Blue Sparkle Dust by GSA.
Santa and Sleigh
Fill 3D Santa Chocolate Mold and Sleigh Chocolate Mold with melted dark chocolate. Freeze until firm. Unmold with care. Using additional melted chocolate, glue the two side panels to the body of the sleigh. Hold each piece in place for 1-2 minutes until the chocolate is set. I wear cotton gloves when handling the chocolate to prevent leaving fingerprints.
Repeat process with Santa, holding halves together until chocolate is set. If seams on sides of Santa are not flush, brush with melted chocolate to fill in for a smooth appearance. For a glossier finish on Santa and Sleigh, spray with CAI Edible Lacquer Spray.
